Easy Recipe for Turkey Lettuce Wraps

This past week we made Asian turkey lettuce wraps & pineapple fried rice.
This is a family favorite recipe and one of the few meals all four of my kids will eat.
If you have kids you know how hard that is!
Ingredients Needed to Make Asian Turkey Lettuce Wraps
- 1 tablespoon vegetable or peanut oil
- 1 large onion (chopped)
- 1 1/4 pounds ground turkey
- 1/2 cup peanut sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon soy sauce
- 1 cucumber, peeled and chopped with seeds taken out
- 2/3 cup coarsely chopped fresh mint
- 1 head of butter or Boston lettuce

Step by Step Instructions for How to Make our Recipe for Turkey Lettuce Wraps
Step ONE – Cook Onions with Olive Oil
Heat olive oil in large skillet over medium heat.
Add onion and cook until onions soften.
Step TWO – Cook Ground Turkey

Add ground turkey to the onions & completely cooked through.
Step THREE – Add Sauces to the Ground Turkey
Add peanut sauce, hoisin sauce, and 1tbsp soy sauce until heated through.
Step FOUR – Garnish with Cucumber & Fresh Mint
Lastly, mix in the cucumber and the fresh mint to your ground turkey & add to your Boston lettuce wraps.
At our house we use the cucumber and chopped mint as a garnish for Jason and I since the kids aren’t crazy about them.
Easy Pineapple Fried Rice Recipe to Go Perfectly with Turkey Lettuce Wraps
Ingredients Needed to Make Pineapple Fried Rice
•1 cup cooked rice
•1 tbsp. vegetable or olive oil
•2 eggs
•1/2 can pineapple chunks
Instructions for How to Make Pineapple Fried Rice
1) Cook white rice in a rice cooker
2) Heat vegetable or olive oil in wok
3) Add scrambled eggs
4) Add cooked white rice
5) Add pineapple chunks until heated through
