3 Cheese Pepper Pasta Recipe

Cook Time – 30 Minutes
Broil Time – 3 Minutes
This is one of Jason and my easy go to recipes on a week night.
It is quick (less than a 1/2 hour to prepare), easy to make and goes great with a glass of white wine after a long work day!
It’s not super low in calories like most of the recipes I share so you might want to plan a run before or long walk after eating.
This dish is also meat free so it’s a good one to serve for those meatless Monday nights.
Ingredients for How to Make 3 Cheese Pepper Pasta
- 4 tablespoons butter
- 1 lb Rotini pasta
- 3 sweet peppers
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup Parmesan cheese
- 1/4 teaspoon fresh ground pepper
Step by Step Instructions for How To Make 3 Cheese Pepper Pasta
Step ONE – Boil the Water & Prepare the Pasta
Boil pasta in big pot of salted water for 8-10 minutes.
Step TWO – Cut the Peppers & Cook for 1 Minute
- If you have a cast iron pan, I would recommend cooking your peppers in that so you won’t need to dirty another dish when broiling the pasta at the end.
Cut up the peppers in long strips and cook in pan with 1 tablespoon of butter.
- While the peppers are cooking… this is a good time to turn on your broiler.
Step THREE – Add the Pasta, Cheese & Butter
Toss in pasta with the peppers, 3 tablespoons butter and mix all of the cheese except for 1/4 cup of Paremsan.
Step FOUR – Sprinkle Parmesan Cheese & Broil the 3 Cheese Pepper Pasta Dish
Add the remaining 1/4 cup of Parmesan Cheese to the top of your 3 cheese pepper pasta before broiling.
- If you don’t have an oven safe pan to broil your 3 cheese pepper pasta, transfer the pasta & peppers to a buttered baking dish.
Otherwise, broil the 3 cheese pepper pasta dish in your oven safe pan for about 3 minutes.
Step FIVE – Sprinkle Fresh Ground Pepper & Enjoy
Sprinkle some fresh ground black pepper to your dish if desired… In our house you can never have enough pepper, ha!
