Despite what my velvet pumpkins & mums might be telling you I am actually sad that our summer is over.  

This has definitely been one of my favorite summers with the kids despite being together every day.

The 4 little & not so little Lehmans going back to school means they will be that much older next summer & am I desperately trying to keep them little as I realize just how fast life goes.  

To celebrate summer’s last day of August I thought I would share one last summer recipe my simple & easy peach cobbler recipe.  

Ingredients for Peach Cobbler Recipe

  • 6-7 Large Peaches sliced or 1 Quart Canned Peaches
  • 1/2 cup granulated sugar
  • 2 tablespoons instant tapioca
  • 1 cup flour
  • 1 teaspoons of baking powder
  • 1 eggs
  • 1 stick of butter (melted)

Instructions for How to Make Peach Cobbler Recipe Step by Step

Pre-Heat Your Oven

Preheat your oven to 350 degrees.

Add Sliced Peaches to your Pie Plate Along with Sugar & Tapioca

Place sliced peaches in your favorite pie plate along with sugar & tapioca. Stir & let sit for 15 minutes.

*If using canned peaches make sure to drain the liquid before adding the peaches to your pie plate.

Create Peach Cobbler Topping

Add melted butter, flour, baking powder & an egg to a mixing bowl & mix.

Add Topping to the Sliced Peaches

Using 2 spoons drop the topping on the peaches.  (The batter will not cover completely).

Bake for 40-45 Minutes

Bake 40 – 45 minutes until the peaches start bubbling & the crust is a light golden brown.  

Check the peaches after 30-35 mins & if the crust is browning too quick cover the cobbler loosely with foil.

Let the cobbler cool a little and serve plain or with some vanilla ice cream.
