- 1 tablespoon olive or vegetable oil
- 3 cups cooked chicken ( I used 4 boneless chicken thighs)
- 1 stick of butter
- 1 medium onion chopped
- 1 (8 oz) box mushrooms chopped
- 1/2 cup flour
- 2 cups 1/2 and 1/2
- 2 cups milk ( I used 1%)
- 3 cups chicken broth
- 3 cups chopped frozen broccoli thawed
- 1/2 teaspoon of pepper
- 1/2 teaspoon thyme
- 2 teaspoons Lawry seasoning salt
- 1 cup shredded cheddar cheese
Step by Step Instructions for How to Make this Easy Creamy Chicken and Broccoli Soup Recipe
Step ONE – Cook the Chicken
Cook the boneless Chicken in 1 tablespoon olive or vegetable oil.
Step TWO – Cook the Mushrooms & Onions
Melt butter in large saucepan or soup pot over low heat & add the chopped mushrooms & onions until softened.
Step THREE – Add Flour
Stir in the 1/2 cup of flour to the onions & mushrooms & cook for 1 minute.
Step FOUR – Stir in the Half & Half, Milk & Chicken Broth
Add half & half, milk & chicken broth & cook over medium heat, stirring constantly until the mixture is thick & bubbly.
Step FIVE – Add the Cooked Chicken, Broccoli & Seasonings
Stir in the cooked chicken, broccoli, pepper, thyme & seasoning salt.
Cover the mixture & simmer for 10 minutes, stirring occasionally.
Step SIX – Garnish with Cheese & Enjoy
